Experience a different wet mill process in our Maragogype Honey specialty coffee. Harvested from a rare, natural mutation of the classic Typica tree, this exclusive direct-from-farm micro-allocation captures the clean, highly articulate fruit profiles of its lineage, presented in an exceptionally large bean.

To honor this magnificent lot, we utilized a meticulous honey process fermentation, leveraging the oversized bean’s thick, sugar-rich mucilage layer to foster deeper, complex sweetness. Using a sheltered raised-bed drying method, we dry the coffee slowly and uniformly to prevent “case hardening” and preserve the delicate inner cell structures. This precise processing profile was achieved through a series of unexpected milestones on our farm.
